Angel Hair with Early Summer Veggies

  • 2 summer squash or zucchini, sliced in thin rounds
  • 1 cup basil leaves, chopped
  • 3 garlic scapes, minced
  • 1 cup fresh shell peas
  • 1/2 pound snow peas
  • handful of sundried tomatoes, rehydrated and chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Parmesan, grated
  • salt and pepper to taste
  • 1 lb. angel hair pasta

In a large skillet, saute the garlic scapes in olive oil over medium heat, until just starting to brown. Add the squash and cook 3-5 minutes more. Add the snow peas, and cook 2 minutes more, then the shell peas, basil, and dried tomatoes. Cook another 2-3 minutes, until everything is tender.

Toss the vegetables with the cooked pasta, two cheeses, salt and pepper to taste, and a splash of olive oil.

Other early summer veggies that are great in this dish: any kind of green (chard, spinach, kale), sugar snap peas, scallions, fresh onions, hakurei turnips.
