Baby Greens with Berries, Goat Cheese and Pine Nuts

Mixed baby greens
Orange/sesame dressing
Fresh berries of choice
Toasted pine nuts
Goat cheese, crumbled
Can also add shredded beets, radishes, fresh peas or whatever else you have on hand

Sesame Orange Dressing
2 T orange juice concentrate
2 T soy sauce
1 T herb or rice wine vinegar
2 T toasted sesame oil
Salt, pepper and sugar to taste

Toasted Pine Nuts – Put on cookie sheet or pie tray and toast until light brown in 350 oven - about 5 minutes. You can also do stovetop in a skillet; watch carefully, as they are extremely easy to burn.

To serve – Toss mixed greens with appropriate amount of salad dressing, put onto individual plates. Top with berries of your choice, goat cheese and pine nuts. Beautiful and delicious.
